Whole poached pear cake with Dulce de leche

Yesterday I made the most amazing cake…

Who would have thought healthy could taste so darn good. The recipe can be found in Jo Whitton’s Quirky Cooking

I didn’t have any whole pears so substituted with sliced dried organic pears. My cake tin was also a little larger so cooked in half the time.

If you use the macadamia oil this cake is dairy free too……..

The lucky recipients of this cake today – thought it was spectacular, definitely gave it their tick of approval.
